Chicken Cordon Bleu Casserole

I don't know what your definition of comfort food is, but this recipe is it for me.  Well this and Mac and Cheese.  And Enchiladas.  And Pizza.  Ok!  We're getting off track here!


This recipe is warm and creamy and cheesey and delicious!  I had some left over ham from Easter (duh!) So I whipped this little gem up.  It was soooo soo good and was also so easy to make.  If I had people over at the time, I would have been very popular.  But I didn't, so more for me!




I just want to warn you though, this is the kind of recipe, that when you make it, you will literally eat the leftovers every night that week.  So clear your schedule, because this one is good!  




Chicken Cordon Bleu Casserole


Ingredients

  • 2-3 chicken breasts (about 12 oz of meat total, so 2 large or 3 small)
  • 1 Box Stove Top Stuffing
  • 8 oz. Ham
  • 1 tsp Olive Oil
  • 1 Tbls Flour
  • 1 Cup Non-Fat Milk
  • 4 Slices light Swiss Cheese
  • 3 Wedges Laughing Cow Swiss Cheese Spread
  • 1 Tsp. Salt
  • 1 Tsp Garlic Powder
  • ½ Tsp Cracked Black Pepper
  • 1/4 Cup Butter
  • 1 1/2 Cups Water



Directions

  1. Cut Chicken into small bite size pieces
  2. Saute chicken in Olive Oil in a saucepan.
  3. Once cooked, sprinkle in 2 Tbls Flour
  4. Stir and cook another minute to incorporate flour.
  5. Add milk, both cheeses and salt, pepper and garlic to saucepan.  
  6. Let cook approx 5 minutes on medium, sauce should bubble a bit ini order to thicken properly.
  7. Add Ham, combine thoroughly and turn off heat.  Add mixture to a casserole dish.
  8. In a large microwave safe bowl, microwave water and butter for 2-3 minutes.  To melt butter and get water hot.
  9. Stir in stuffing mix thoroughly.  
  10. Top the casserole dish filled with the Chicken/Cheese mixture with the stuffing mix.
  11. Bake at 375* for approx 20 minutes until stuffing gets crispy on top.
  12. Enjoy!


Makes 6 servings.  


Note: This casserole can EASILY be made ahead of time and just baked off in the oven to heat, for an even easier weeknight meal!
