You guys, I'm so exited about this one!!
So, confession. I love Mayonnaise!
It's so versatile, and delicious. I mean dips, salads, sauces, it works on a lot of stuff. But you know what the problem is, it's bad for you! Like really bad, you know? 100 calories for a tablespoon. Eek!
I think the love of mayo comes from a dry food phobia, which I have talked about before. So in search of a solution, a lot of health books talk about putting avocado on your sandwiches instead of mayo. Avocado, also being something I love, I thought, what the hey! Also at only 25 calories, per tablespoon, you can't loose!
And if you guys like avocado, I'm sure you've had avocado on a sandwich. Especially if you live here in California, where practically every backyard has an avocado tree, mine included! So while I love this, it isn't really a true mayo substitute for me. Because avocado flesh is so thick, it doesn't make the sandwich as moist and creamy as I would like. So I had an idea, while avocado is certainly delicious, it needs to be lightened a bit, made less dense.
So I got to work, and I'm telling you, then end result was just soo so good!! I made corned beef last night. Yes I know it's weeks after St Patty's Day, life is busy, ok? I don't want to talk about it. Anyways, and this was perrrrfect on my corned beef sandwich! A true true substitute in my mind. I also made coleslaw (keep scrolling down) and the hubs had no idea it was mayo-less. Ha! Tricked him again! Love you hubs!
Avocado “Mayo”
Ingredients
- Flesh of one avocado
- 4 oz 0% Greek Yogurt
- 1/2 tsp each, garlic powder, salt and pepper
Directions
- Throughly mash and mix together avocado and yogurt.
- Add in in spices and stir!
Note:
You may want to double this recipe, because you’ll likely eat most of
it off the spoon before you get it on anything! Maybe that’s just me?
Calories- 20 per Tablespoon

Cabbage, Avocado Mayo, Dijon Mustard. 1/2 tsp honey. Done and Done. |
