Grilled cheese

Why is a grilled cheese so good?  I think it's the ultimate comfort food.


And last week, comfort food was just what I needed.  I worked like eleven-teen hundred hours.  Ok, that's a total exaggeration, but it was a lot!  Probably 14 or so.  Went in at about 6am.  So for those of you that don't know, I work at a University, I'm the head of the Catering Dept.  The only Catering Dept on campus.  So basically, if food is eaten on campus, I brought it to them.  Or someone from my fantastic staff.  Which I have to manage.  So life for me, can get very busy!



This day in particular, I went in at 6am, and got home somewhere in the neighborhood of 8pm.  Now I'll also tell you I have a 30 minute commute, which isn't bad at all, just annoying.  Like when you get off work, and you want to be home.  You want to be home, now.  Not in 30 minutes.  Now.  Oh well, I digress.  So I got home from work, and was starving!  Ok, hungry (again I exaggerate too much, it's a problem I'm working on.  Well it's on my list of things to work on)

Anyways, so I get home from work, and just want something quick!  And Cheesy.  You know me!  So I whipped this up and it was, well, no other way to describe it, but sooo sooo good!  Like cheesy and melty and gooey and all around satisfying. 


You should make this.  It's delicious!!
 



Apple Grilled Cheese


Ingredients

  • 2 Slices light bread (mine is Sara Lee 45 calorie bread)
  • 1 Wedge Laughing Cow- I chose swiss for this one
  • 1 Slice Light Cheddar Cheese
  • About a third of a green apple (obviously you can’t just eat a third, so now, voila a side dish!)



Directions

  1. Are instructions necessary here, you’ve made a grilled cheese before, no?
  2. Thinly slice apples
  3. Spread one slice of bread with the laughing cow cheese.
  4. Layer the green apple and the slice of cheddar on top of that.  Top with remaining bread slice.
  5. Spray each side of sandwich with Olive Oil Spray (I have one of those Misto thingys which I highly recommend!)
  6. Cook on medium in a saute pan for approx 5 minutes.  
  7. Enjoy!


Calories- 215 of melty gooey deliciousness!   65 more if you eat the whole apple!
